Carbonara

Quick and easy (and delicious!) carbonara

Ingredients:

4 portions

  • 250g spaghetti
  • 150g bacon or pancetta, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional)
  • Olive oil

Instructions:

  1. Cook the spaghetti in a large pot of salted boiling water according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
  2. While the spaghetti is cooking, heat a drizzle of olive oil in a large skillet over medium heat. Add the diced bacon or pancetta and cook until crispy, about 5-7 minutes.
  3. Add the minced garlic to the skillet with the bacon and cook for another minute until fragrant. Remove from heat.
  4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
  5. Add the cooked spaghetti to the skillet with the bacon and garlic. Toss to combine, ensuring the spaghetti is evenly coated with the bacon fat.
  6. Pour the egg and Parmesan mixture over the spaghetti and quickly toss to combine, ensuring the eggs don't scramble. If the sauce is too thick, gradually add some of the reserved pasta water until desired consistency is reached.
  7. Serve the carbonara immediately, garnished with chopped fresh parsley if desired. Enjoy your quick and delicious homemade carbonara!
