
Grilled cod
A fantastic way to bring out its mild flavor while adding a slight smokiness that enhances the fish without overpowering it.
Ingredients:
- 4 cod fillets (about 6 ounces each)
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 1 lemon, sliced into thin rounds
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped (optional)
Instructions:
- Rinse the cod fillets under cold water and pat dry with paper towels.
- Brush both sides of each fillet with olive oil and season generously with salt and pepper.
- Preheat your grill to medium-high heat. If using a charcoal grill, wait until the coals are uniformly hot and covered in gray ash.
- If your grill has a tendency to stick, lightly oil the grill grates.
- Place the cod fillets on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Avoid moving the fish unnecessarily to prevent it from breaking apart.
- Halfway through grilling, add the lemon slices to the grill, letting them char slightly for added flavor.
- In a small bowl, mix the minced garlic with chopped parsley and dill.
- Remove the cod and grilled lemon slices from the grill.
- Sprinkle the herb mixture over the grilled cod fillets.
- Serve immediately with the grilled lemon slices on the side, squeezing the charred lemon over the fish to add a smoky citrus flavor.
