Grilled Salmon Fillet with Green Salad

Mouthwatering salmon fresh off the grill.

Ingredients:

2 portions

For the salmon:

  • 2 salmon fillets (about 150g each), skin-on
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

For the green salad (suggestion):

  • 4 cups mixed salad greens (lettuce, spinach, arugula, etc.)
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Pat the salmon fillets dry with paper towels. Drizzle both sides with olive oil and season with salt and pepper.
  3. Place the salmon fillets skin-side down on the grill. Grill for about 4-5 minutes per side, or until the salmon is cooked through and easily flakes with a fork. Remove from the grill and set aside.
  4. In a large mixing bowl, combine the mixed salad greens, sliced cucumber, avocado, cherry tomatoes, and red onion. Customise as per your preferences!
  5. In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper to make the salad dressing.
  6. Pour the dressing over the salad and toss gently to coat all the ingredients.
  7. Divide the salad onto plates and top each serving with a grilled salmon fillet.
  8. Serve immediately with lemon wedges on the side for squeezing over the salmon. Enjoy your delicious and nutritious grilled salmon fillet with green salad!
