
Grilled Salmon Fillet with Green Salad
Mouthwatering salmon fresh off the grill.
Ingredients:
2 portions
For the salmon:
- 2 salmon fillets (about 150g each), skin-on
- 1 tablespoon olive oil
- Salt and pepper to taste
- Lemon wedges for serving
For the green salad (suggestion):
- 4 cups mixed salad greens (lettuce, spinach, arugula, etc.)
- 1 cucumber, sliced
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
- Preheat your grill to medium-high heat.
- Pat the salmon fillets dry with paper towels. Drizzle both sides with olive oil and season with salt and pepper.
- Place the salmon fillets skin-side down on the grill. Grill for about 4-5 minutes per side, or until the salmon is cooked through and easily flakes with a fork. Remove from the grill and set aside.
- In a large mixing bowl, combine the mixed salad greens, sliced cucumber, avocado, cherry tomatoes, and red onion. Customise as per your preferences!
- In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper to make the salad dressing.
- Pour the dressing over the salad and toss gently to coat all the ingredients.
- Divide the salad onto plates and top each serving with a grilled salmon fillet.
