Porkloin with red wine sauce

A ensures a tender and flavorful pork loin, complemented by a rich and aromatic red wine sauce.

Ingredients:

  • 1 pork loin (about 2 to 3 pounds)
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 1 cup red wine (choose a good quality wine that you'd enjoy drinking)
  • 1 cup chicken or beef broth
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 2 tablespoons butter
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the pork loin generously with salt and pepper.
  3. Heat the olive oil in a large oven-proof skillet over medium-high heat.
  4. Sear the pork loin on all sides until golden brown, about 2-3 minutes per side.
  5. Remove the pork loin from the skillet and set aside.
  6. In the same skillet, reduce the heat to medium.
  7. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent and soft, about 5 minutes.
  8. Pour in the red wine to deglaze the pan, scraping up any brown bits from the bottom with a wooden spoon.
  9. Add the chicken or beef broth, balsamic vinegar, and rosemary. Bring the mixture to a simmer.
  10. Return the pork loin to the skillet. Spoon some of the sauce over the pork.
  11. Transfer the skillet to the oven. Roast the pork loin for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  12. Baste the pork occasionally with the pan sauce during cooking.
  13. Once the pork is cooked, transfer it to a cutting board and tent it with foil to rest.
  14. Place the skillet back on the stove over medium heat.
  15. Add the butter to the sauce and whisk until it is fully incorporated and the sauce is glossy.
  16. If needed, reduce the sauce further to thicken it to your liking.
  17. Slice the pork loin and arrange the slices on a platter.
  18. Spoon the red wine sauce over the slices.
  19. Garnish with chopped fresh parsley.
