
Porkloin with red wine sauce
A ensures a tender and flavorful pork loin, complemented by a rich and aromatic red wine sauce.
Ingredients:
- 1 pork loin (about 2 to 3 pounds)
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 onion, finely chopped
- 1 cup red wine (choose a good quality wine that you'd enjoy drinking)
- 1 cup chicken or beef broth
- 2 tablespoons balsamic vinegar
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 2 tablespoons butter
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the pork loin generously with salt and pepper.
- Heat the olive oil in a large oven-proof skillet over medium-high heat.
- Sear the pork loin on all sides until golden brown, about 2-3 minutes per side.
- Remove the pork loin from the skillet and set aside.
- In the same skillet, reduce the heat to medium.
- Add the minced garlic and chopped onion, sautéing until the onion becomes translucent and soft, about 5 minutes.
- Pour in the red wine to deglaze the pan, scraping up any brown bits from the bottom with a wooden spoon.
- Add the chicken or beef broth, balsamic vinegar, and rosemary. Bring the mixture to a simmer.
- Return the pork loin to the skillet. Spoon some of the sauce over the pork.
- Transfer the skillet to the oven. Roast the pork loin for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
- Baste the pork occasionally with the pan sauce during cooking.
- Once the pork is cooked, transfer it to a cutting board and tent it with foil to rest.
- Place the skillet back on the stove over medium heat.
- Add the butter to the sauce and whisk until it is fully incorporated and the sauce is glossy.
- If needed, reduce the sauce further to thicken it to your liking.
- Slice the pork loin and arrange the slices on a platter.
- Spoon the red wine sauce over the slices.
- Garnish with chopped fresh parsley.
