
Spicy tomato pasta
A pasta dish is wonderfully aromatic.
Ingredients:
- 400 grams (about 14 oz) pasta (e.g., spaghetti, penne, or linguine)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 red chili pepper, finely chopped (adjust based on spice preference)
- 1 can (400 grams or 14 oz) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Red pepper flakes, to taste for extra heat
- Fresh basil leaves, for garnish
- Grated Parmesan cheese, for serving
Instructions:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
- Drain the pasta, reserving about a cup of the pasta water for later.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and chopped red chili pepper. Sauté for about 1-2 minutes until fragrant but not browned.
- Stir in the crushed tomatoes, dried oregano, and dried basil. Simmer for about 10 minutes, allowing the flavors to meld together.
- Season with salt, pepper, and red pepper flakes to your desired level of spiciness.
- Add the drained pasta to the sauce in the skillet. Toss well to coat the pasta evenly.
- If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
- Plate the pasta and garnish with fresh basil leaves.
- Serve with grated Parmesan cheese on the side.
