Spicy tomato pasta

A pasta dish is wonderfully aromatic.

Ingredients:

  • 400 grams (about 14 oz) pasta (e.g., spaghetti, penne, or linguine)
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 red chili pepper, finely chopped (adjust based on spice preference)
  • 1 can (400 grams or 14 oz) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Red pepper flakes, to taste for extra heat
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, for serving

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
  2. Drain the pasta, reserving about a cup of the pasta water for later.
  3. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic and chopped red chili pepper. Sauté for about 1-2 minutes until fragrant but not browned.
  5. Stir in the crushed tomatoes, dried oregano, and dried basil. Simmer for about 10 minutes, allowing the flavors to meld together.
  6. Season with salt, pepper, and red pepper flakes to your desired level of spiciness.
  7. Add the drained pasta to the sauce in the skillet. Toss well to coat the pasta evenly.
  8. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
  9. Plate the pasta and garnish with fresh basil leaves.
  10. Serve with grated Parmesan cheese on the side.
