Tomato Soup

Heartwarming tomato soup, perfect for chill days!

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (400g each) diced tomatoes
  • 1 can (400g) tomato puree
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup heavy cream (optional)
  • Fresh basil leaves, for garnish (optional)
  • Croutons or bread for serving (optional)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic to the pot and cook for another minute until fragrant.
  3. Pour in the diced tomatoes, tomato puree, and vegetable broth. Stir in the dried basil and oregano. Season with salt and pepper to taste.
  4. Bring the soup to a simmer and let it cook for about 15-20 minutes, stirring occasionally.
  5. If using an immersion blender, carefully blend the soup until smooth directly in the pot. If using a regular blender, allow the soup to cool slightly before blending in batches.
  6. Once the soup is smooth, stir in the heavy cream (if using) to add richness. Taste and adjust seasoning if necessary.
  7. Ladle the tomato soup into bowls and garnish with fresh basil leaves if desired. Serve with croutons or bread on the side for dipping. Enjoy your comforting homemade tomato soup!
