
Tomato Soup
Heartwarming tomato soup, perfect for chill days!
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (400g each) diced tomatoes
- 1 can (400g) tomato puree
- 2 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup heavy cream (optional)
- Fresh basil leaves, for garnish (optional)
- Croutons or bread for serving (optional)
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic to the pot and cook for another minute until fragrant.
- Pour in the diced tomatoes, tomato puree, and vegetable broth. Stir in the dried basil and oregano. Season with salt and pepper to taste.
- Bring the soup to a simmer and let it cook for about 15-20 minutes, stirring occasionally.
- If using an immersion blender, carefully blend the soup until smooth directly in the pot. If using a regular blender, allow the soup to cool slightly before blending in batches.
- Once the soup is smooth, stir in the heavy cream (if using) to add richness. Taste and adjust seasoning if necessary.
- Ladle the tomato soup into bowls and garnish with fresh basil leaves if desired. Serve with croutons or bread on the side for dipping. Enjoy your comforting homemade tomato soup!
