Vegetarian stir fry noodles

A burst of flavours and textures in every bite.

Ingredients:

4 portions (adjust as needed)

  • 200g dried noodles (such as rice noodles or egg noodles)
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms (such as shiitake or button mushrooms)
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Optional toppings: sliced green onions, sesame seeds, chopped cilantro

Instructions:

  1. Cook the noodles according to the package instructions until al dente. Drain and set aside.
  2. In a large wok or skillet, heat the sesame oil over medium-high heat. Add the minced garlic and sliced onion, and sauté for 2-3 minutes until fragrant and softened.
  3. Add the bell pepper, carrot, broccoli, and mushrooms to the wok. Stir-fry for 5-6 minutes, or until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, maple syrup or honey, and grated ginger.
  5. Add the cooked noodles to the wok, along with the sauce mixture. Toss everything together until well combined and heated through.
  6. Season the stir-fry with salt and pepper to taste. Adjust the seasoning or sauce according to your preference.
  7. Remove the stir-fry from the heat and transfer to serving plates. Sprinkle with sliced green onions, sesame seeds, and chopped cilantro if desired.
