
Vegetarian stir fry noodles
A burst of flavours and textures in every bite.
Ingredients:
4 portions (adjust as needed)
- 200g dried noodles (such as rice noodles or egg noodles)
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 1 small onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 1 cup sliced mushrooms (such as shiitake or button mushrooms)
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup or honey
- 1 teaspoon grated ginger
- Salt and pepper to taste
- Optional toppings: sliced green onions, sesame seeds, chopped cilantro
Instructions:
- Cook the noodles according to the package instructions until al dente. Drain and set aside.
- In a large wok or skillet, heat the sesame oil over medium-high heat. Add the minced garlic and sliced onion, and sauté for 2-3 minutes until fragrant and softened.
- Add the bell pepper, carrot, broccoli, and mushrooms to the wok. Stir-fry for 5-6 minutes, or until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, maple syrup or honey, and grated ginger.
- Add the cooked noodles to the wok, along with the sauce mixture. Toss everything together until well combined and heated through.
- Season the stir-fry with salt and pepper to taste. Adjust the seasoning or sauce according to your preference.
- Remove the stir-fry from the heat and transfer to serving plates. Sprinkle with sliced green onions, sesame seeds, and chopped cilantro if desired.
